Northern China has grown wheat. Wheat is grown on dry land, relying on rain for moisture. Farmers are able to depend more on themselves, leading to more of an independent mindset that permeates northern Chinese culture.

On the hand hand, Southern China has grown rice for thousands of years. Rice is grown on irrigated land, requiring the sharing of water and the building of dikes and canals that constantly require maintenance, Rice farmers must work together to develop and maintain an infrastructure upon which all depend, has led to the interdependent culture in the southern region.

Wheat and Rice

Northern China eats bread and Mantou as their daily staple food with other small complimentary savory dishes like radish, pickles, and fermented bean curd. .

Southern China eats rice as their daily staple food in different variations, such as steamed white rice, fried rice, and claypot rice.
「麦与米」

北方以面食为主食,通常早餐会用榨菜或者豆
腐乳来搭配馒头。 而南方是以大米为主,并且
会做各种样式的,比如炒饭或者煲仔饭。
Zong Zi

The northern Chinese people make zongzi that’s so sweet that it could serve as a dessert. Their filling is devoid of meat and full of red bean paste. Some might even have tapioca or taro. In the North, Zongzi is mostly eaten on festivals like a dessert.

The southern zongzi is savory and a little bit salty. The filling consists of marinated pork belly (though chicken could be used), shiitake mushrooms, and salted duck egg, amidst other ingredients. In the South, Zongzi is often eaten on a daily basis as a meal.

Hotpot

The traditional Beijing hotpot is one amongst the several types of hotpot within the ‘Northern-style hotpot’ category and is characterized by its simplicity and the use of copper Mongolian pots. This style of hotpot is very pure and focuses on the quality of the ingredients. Ingredients are often cooked in clear water or lightly flavored broth, with some scallions, goji berries, and ginger.

The Chongqing hotpot is one of the signature hotpots within the ‘Southern-style hotpot’ category. The heavily flavored broth and numbing hot spiciness (málà) is what Chongqing hotpot is most known for. The hotpot soup base uses premium butter as its special ingredient, giving the broth a very rich taste that perfectly matches the red hot chili.

传统的北京火锅是「北方风格」火锅中几种类
型的火锅之一,特点是简单易用以及使用蒙古
铜制火锅。这种火锅风格非常纯正,偏重于食
材的品质。配料通常在清水或淡味的肉汤中煮

出名的是浓汤和麻辣味。火锅汤底使用优质黄
油作为特殊成分,使汤具有非常浓郁的口感,
非常适合红辣椒。
